Indian Vegetarian Recipes: Paneer Makhani


Ingredients

Paneer Tikka 1/2 kg (home made or store bought)
2 tbsp butter
1 tsp oil
1 tsp kala jeera (black cumin)
1 cup tomato puree
salt - to taste
3/4 cup cream
a few strips of green chillies, cut lengthwise, for garnish


Preparation

Heat the butter and oil, and when the butter melts, addthe kala jeera and then the tomato puree and cook over high heat, stirring a few times, till the mixture comes to a boil, and then simmer till the puree splutters. Add the salt and paneer and turn around afew times till coated with the puree and heated through. Add the cream and turn around a few times till well blended and hot. Serve immediately, garnished with the green chillies.Note: If serving later, add the cream and shut off the heat, and re-heat and proceed with the rest, later.

Indian Vegetarian Recipes: Paneer Kofta

Ingredients

Paneer 200gms
Green chilies 4-6
Onions, chopped 2
Tomatoes, blend to fine puree 3-4
Ginger-garlic paste 1 tsp
Turmeric 1/4 tsp
Chili powder 1 tsp
Coriander powder 1 tsp
Cashew nuts 25gms
Garam masala 1 tsp
Oil 75 gms
Corn flour 4 tsp
Baking powder 1/4 tsp
Salt to taste
Pepper powder pinch


Preparation


Take the paneer into a bowl and press with your fingers until it is smooth. To this, add corn flour, baking powder, pepper powder, chopped green chilies, cashews, little garam masala, salt and mix well. Make small balls from this mixture and fry in hot oil until golden brown. Keep them aside. Heat 3-4 tbsp of oil in another pan and fry the chopped onions until golden. Also add ginger-garlic paste, turmeric, chili powder, coriander powder and fry for few more minutes. Then add tomato puree and cook until the oil separates. Now add 1 cup of water, remaining garam masala, salt and cook until the gravy thickens. Add the above prepared koftas to the gravy and serve hot.

Ingredients

½ kg paneer, grated
3 onions
1 tsp ginger and garlic, finely chopped
½ cup tomato, boiled and mashed
Little pinch of orange food colour
1 cup cream
1 tsp sugar
1 tsp salt
10 to 10 raisins
½ tsp garam masala

Preparation

Grate the paneer. Keep aside. Don't grate in mixer. Grate in grater. Now grate onions in mixer.
Now take butter or ghee in kadhai and heat it. Add rasins and garam masala.
Fry few seconds and add ginger garlic and onions. Add tomato puree and fry 2 min.
Now add paneer and cream. Add salt and sugar. Fry 2 min. Its all done.
Garnish with raisins.

Ingredients

1 loaf Bread
1/2 cup grated Paneer (Cottage Cheese)
1 Tomatoes
1 Onions
2 Green chillies
1/4 tsp Red chilli powder
Salt to taste
Butter as needed


Preparation

Chop onions, chillies and tomatoes. Mix the grated paneer with chopped vegetables, salt, red chilli powder and keep aside. Take two bread slices and butter them, put some paneer mixture on one slice and cover it with other bread slice. Put this in sandwich toaster until the bread turns crispy and brown. Serve with ketchup.

Indian Vegetarian Recipes: Paneer Bhurji

Ingredients

crumbled paneer 1 cup
Green Pepper 1 (diced into inch long pieces)
Chopped tomatoes 2
chopped garlic 4 tsp
chopped ginger 1 tbsp
cumin seeds 1 tsp
Chopped onions 2
turmeric powder ¼ tsp
chopped green chillies 1-2 (optional)
chilli powder ½ tsp (optional)
chopped coriander 1 tbsp
salt to taste
cooking oil or ghee 2 tbsp

Preparation

Heat oil in a heavy bottomed pan. Add the cumin when it starts spluttering add ginger, garlic and green chillies. Fry for a minute then add onions. stir till onions turn soft and translucent then add turmeric, salt and chilli powder. Add tomatoes and on medium heat cook until the mixture starts to leave oil. keep stirring to prevent it from burning. now add paneer, capsicum and cook for couple of minutes while stirring it gently. Garnish with coriander before serving.

Indian Vegetarian Recipes: Palak Paneer

Ingredients

  • Spinach: 1 kg
  • Paneer: 200 grams
  • Onion: 2
  • Butter: 6 table spoon
  • Oil: 2 table spoon
  • Cumin seeds: 2 tea spoon.
  • Black pepper powder: 1/2 tea spoon
  • Ginger-garlic paste: 1&1/2 tea spoon
  • Green chilly paste: 1tea spoon
  • Garam Masala Powder: 2 tea spoon
  • Salt to taste

Preparation

Mix ginger-garlic paste, green chilly paste and some water with spinach and cook it in a pressure cooker for 7-8 minutes. Now, grind this mixture into a fine paste. After that, cut Paneer (Indian cottage cheese) into small cubes. Heat oil in a pan and fry the Paneer pieces until they turn light brown. Set the Paneer pieces aside. Heat 3 table spoons of butter and fry cumin seeds for half a second. Now add chopped onion and fry until the onions become pink. Add salt, black pepper powder, Garam Masala to it and sauté well. Now, add the fried Paneer pieces and cooked spinach paste and mix well. Now put Palak Paneer in a baking tray, add rest of the butter and bake for 1/2 hour at 180 deg C.

Indian Vegetarian Recipes: Matar Paneer

Ingredients

Green peas – 1 cup
Sugar – a pinch
Paneer – 1 cup, cubed
Oil – 1+1 teaspoon
Ghee – 1+1 teaspoon
Cinnamon – 1 inch stick, broken into halves
Cloves – 3
Cardamom – 2
Cummin seeds – 1-1/2 teaspoon, whole
Black peppecorns – 8-10, whole
Onions – 2, medium size, finely sliced
Red chilli powder – ½ teaspoon or to taste
Coriander powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Ginger – ½-inch piece, finely chopped and crushed
Garlic – 3 cloves, finely chopped and crushed
Green chillies– 3, medicum size, medium hot, sliced into halves
Tomatoes – 2, medium size, finely chopped
Yogurt/Curd – 1/2 cup
Garam masala powder – 1 teaspoon
Cilantro leaves – chopped for garnishing
Lemon juice – 1 teaspoon
Salt – 1 teaspoon or adjusted to taste

Preparation

Boil the green peas with a cupful of water and a pinch of sugar. Cook till tender and keep aside. We love home-made paneer and prepared it very closely as described by Jenn at Atabela, i.e., heat milk till reduced by 1/4th part, add the lemon juice or yogurt (we use lemon juice and found it is more tastier that way), to seperate the curd and whey, tie the curd in a muslin cloth, after the curd is out of moisture, flatten it and cut into paneer cubes. Thanks Jenn for the inspiration. Please see the picture above to see our results.

Heat a pan and pour in the first part of ghee and oil. When smoking hot, deep fry the paneer pieces in oil until light golden color, remove from heat and keep aside. In the same oil when very hot, add cinnamon, cloves, cardamom, black pepper, cummin seeds, and finally onions. Saute until the onions are golden brown here and there. Add the coriander powder, red chilli powder, and turmeric powder. Saute for a minute taking care not to burn the dry masala powders. Remove from fire, allow it cool, and then grind the onion mixuture to a smooth and thick paste. Heat the remaining ghee and oil. Add ginger, garlic, and green chillies. Saute for 2 minutes. Add the ground onion paste and saute for a minute. Add the tomatoes and saute until the oil separates from it. Add the yogurt, cooked peas, paneer pieces and salt. Allow it to simmer for 10 minutes. Add the garam masala mixture a minute before removing mattar paneer masala from the heat. Garnish with coriander leaves, lemon juice, and a dollop of salted butter on top. Serve hot with chappathis, pooris, bread, or plain white rice. Enjoy mattar paneer masala.

Indian Vegetarian Recipes: Chilli Paneer


Ingredients

200 gms Cottage cheese (paneer)
4 tbsps Cornflour
2 tbsps + to deep fryOil
2 Onion
3-4 cloves Garlic
3-4 Green chilli
1 large Capsicum
1/2 cup Vegetable stock
Salt to taste
1/2 tsp White pepper powder
2 tbsps Soy sauce
1/4 tsp Ajinomoto
1 tbsp Chilli sauce

Preparation

Drain paneer well and cut into diamond shaped medium sized pieces. Heat sufficient oil in a wok, roll the paneer pieces in cornflour and deep fry on medium heat until the edges start to turn brown. Remove, drain and keep aside. Blend remaining cornflour (nearly 1 tablespoon) in quarter cup of water and keep aside. Peel onion and cut into thick slices. Peel and crush garlic. Wash, remove stem and slice green chillies. Wash, halve, deseed and cut capsicum into thick strips. Heat two-tablespoons oil in a wok, add crushed garlic and stir-fry for a minute. Add sliced green chillies, onion and capsicum. Sauté for a couple of minutes. Add fried paneer and stir in the vegetable stock. Add salt, pepper powder, soy sauce, chilli sauce, Ajinomoto and stir well. Stir in the blended cornflour and cook on high heat, stirring and tossing until the sauce thickens to coat the paneer and the vegetables. Serve immediately.

Indian Vegetarian Recipes: Rajma Rasmisa

Ingredients


rajma (kidney beans)- 200 gms
cumin seeds - 1/2 tsp
onions ( pyaj) (medium-sized and chopped ) - 3 nos.
fresh tomato (tamatar) puree - 1 cup
ginger (adrak) paste - 1 tblsp
green chillies (chopped)- 3-4 nos.
cumin seeds powder (jeera powder) - 1 tsp
coriander powder (dhania powder) - 1/2 tsp
red chilli (lal mirch) powder -1 tsp
salt (namak) - to taste
oil (tel) - 2 tblsp
curd (dahi) - 1/4 cup
green coriander leaves (dhania patta) (chopped)- 2 tblsp


Preparation


Pick, wash and soak the rajma overnight. Boil the soaked rajma till well cooked. Heat oil, add cumin seeds. When it crackles, add chopped onions. Saute it till light golden brown in colour. Add ginger paste and garlic paste and saute it. Add the tomato puree and saute it. Now add the green chillies, cumin seeds powder, coriander powder, red chilli powder, curd and salt. Cook the masala for 5-6 minutes. Add the rajma, mix it well and add half a cup of water. Cook it for another 15- 20 minutes. Garnish with green coriander leaves.

Indian Vegetarian Recipes: Kadhai Paneer

Ingredients

800 gms paneer, cut into cubes
2-3 onions, chopped
1 tbsp ginger-garlic paste
1 tsp coriander seeds, roasted & pounded
1 tsp black pepper
1 tsp red chili powder
1/2 tsp turmeric powder
1 1/2 cups tomato puree
1 cup green, yellow & red capsicums, chopped
3/4 tsp cumin powder
1/2 tsp green cardamom powder
A pinch of each mace powder, clove powder, black cumin powder & fenugreek seeds
1 tbsp fresh coriander leaves, chopped
3 tbsp ghee or butter

Method

Heat ghee in a pan, add chopped onions and saute until brown. Add ginger-garlic paste and stir-fry till the moisture evaporates. Also add red chili powder, coriander seeds, black pepper powder, turmeric and stir-fry until they change color. Then add tomato puree, salt, paneer cubes, capsicum and fry until the paneer is light brown. Sprinkle the cumin, cardamom, mace, clove, black cumin powders, fenugreek seeds and cook until the paneer is cooked. Remove and adjust the seasoning. Garnish with coriander leaves and serve with parathas or any pulao.

Indian Vegetarian Recipes: Stuffed Capsicum

Ingredients


4 big capsicums
Oil
3/4 cup chopped onion
3-4 tbl spn gram flour (besan)
1/2 tea spn chili powder
A pinch turmeric powder
3-4 curry leaves
1/2 tea spn tamarind extract or thick juice of 3-4 tamarind pieces
1/2 tea spn jaggery
A pinch asafoetida
1 tbl spn grated coconut
Salt

Method


Cut capsicums into two pieces vertically.
Dry roast gram flour on a low heat till a nice aroma comes out, this was not there in original recipe, but I roasted flour to avoid any raw taste. Take out from heat.
Mix all ingredients, except oil and capsicum. Stuff the mixture into capsicum. (no need to add any water for stuffing).
Heat oil in a heavy bottomed or non stick pan and place the capsicums on it. Cover the pan with a tight lid. Cook on low/medium flame for around 15-20mins.

Ingredients

500 gm lady's finger
1 tbsp amchoor
1/2 tbsp tumeric
1 tbsp salt
1 tbsp garam masala
1 tbsp chaat masala
1/2 tbsp cashewnuts(coarsely grounded)
5-6 small onions
1/2 tbsp coarsely pounded almonds
1/2 tbsp groundnuts(coarsely pounded)
1 tbsp curd
1 tbsp oil

Preparation

Mix all the spices,salt,cahewnuts,almonds and groundnuts.Then add curd and mix well.
Use large lady's finger.wash and wipe them.Slit and fill them with the stuffing prepared earlier.Heat oil and fry all the stuffed lady's fingers.Reserve 2 tbsp oil in a pan.Put in all the fried lady's finger.Peel the small onions.Slit them crosswise and add to the vegetable.Cover & cook on low heat.Remove from the heat after 5 minutes and serve hot.
You can garnish it with fresh corriander and green chilli.

Indian Vegetarian Recipes: Pindi Chana
Ingredients

1/4 tsp cinnamon (dalchini) clove (lavang) powder
1 tblsp coriander cut
1 tblsp ghee
1 tsp ginger (adrak) grated
2 tblsp oil
1 cup kabuli chana (white chick peas (matar)) soaked overnight
1 big size tomato (tamatar) cut
1 tsp red chilli (lal mirch) powder
1/2 tsp garam masala
1/2 tsp each cumin & mustard seeds (raai)
1/2 tsp coriander seed powder
3-4 pinch asafoetida
1/4 tsp turmeric (haldi) powder
1 small onion (pyaj) cut into rings
2 tblsp tamarind (imli) extract
1 big size onion (pyaj) cut fine
1 tsp garlic (lasan) grated
3 green chillies chopped

Preparation
  • Pressurestir fry the chana till soft.
  • (approx.
  • 4-5 whistles) heat up oil in a heavy pot mix in seeds, allow to splutter.
  • Mix in asafoetida, ginger, garlic, cut onions, fry till lightly browned.
  • Mix in all dry masala, except clove-cinnamon powder.
  • Stir well, mix in tomatoes, stir fry till oil separates.
  • Remove chana, mix in to pan, stir well.
  • Mix in tamarind.
  • Mix.
  • Stir fry till fairly dry.
  • Keep aside.
  • In a small pan, heat up ghee, mix in clove-cinnamon powder, chillies.
  • Allow to pop a bit, mix in to chana.
  • Stir gently till well mixed.
  • Decorate with cut coriander and onion rings.
  • Serve hot with naan.

Makhani Arbi Masala



Ingredients


Arbi (medium size) - 250 gms
Besan (gram flour) - 2 tblsp
Oil (tel) (tel) - 3 tblsp
Ajwain - 1/2 tsp
Onion (pyaj) (chopped)- one
Green chilli (slit) (deseeded and chopped)- one
Red chilli (lal mirch) powder - 1/2 tblsp
Chopped coriander - 1 tblsp
Salt (namak) - 1/2 tsp or to taste
Lemon juice - 1/2 tblsp
Garam masala - 1/4 tsp

Makhani Gray

Tomatoes (tamatar) (chopped roughly) - 250 gms
Ginger (adrak) paste - 1/2 tsp
Garlic (lasan) paste - 1/2 tsp
Green chilli - one
Red chilli (lal mirch) powder - 1/2 tsp
Laung (cloves)- 2
Choti elaichi (green cardamom)- one
Salt to taste
Butter - 2 tblsp
Honey- 1 tsp
Kasoori methi - 1 tblsp


Preparation of makhani arbi masala recipe



Pressure cook the whole arbi with three cups of water to give one whistle. Keep on low flame for 2-3 minutes. Remove from fire. Cool and drain. To prepare makhani gray, put tomatoes in a bandi, add one cup of water, ginger and garlic paste, green chilli, red chilli powder, laung and chot elaichi. Boil. Cover and cook on low heat till it is reduced to a saucy consistency. Remove from fire. Blend in a mixer. Strain into a clean pan. Add butter. Stir in honey. Add salt to taste. Keep on fire. Boil. Simmer on low flame for 1-2 minutes. Add kasoori methi and remove from fire. Keep the makhani gray aside. Peel and flatten each piece or arbi. Sprinkle some salt and red chilli powder on it. Sprinkle dry besan. Overturn the pieces and sprinkle salt, red chilli and besan on the other side too. mix, so as to coat lightly. Heat oil on a large tawa, add half the arbi and sauté over medium heat till golden. Shift the fried arbi from the center to the sides (periphery) of the tawa. Add the rest of the arbi, fry and shift to the sides. In the same oil, add ajwain, when it turns golden, add chopped onions, grated ginger and green chilli and sauté for three minutes. Add 1/2 tsp salt. Return the arbi to the center, add red chillies and half of the coriander. Fry for a minute. Add the prepared makhani gray and fry until the arbi is coated with the gravy. Adjust seasoning. Sprinkle lemon juice, garam masala and the remaining coriander. Stir and serve immediately.

Indian Vegetarian Recipes: Vegetable Curry
Ingredients
  • 1 large onion, cut into 1-inch chunks (about 2 cups)
  • 3 large garlic cloves, peeled
  • 1 (2-inch-long 1-inch-diameter) piece peeled fresh ginger (about 2 ounces)
  • 3 tablespoons sunflower oil
  • 1 tablespoon garam masala*
  • 2 teaspoons ground cumin
  • 1/2 serrano chile, seeded, chopped
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 2 teaspoons (packed) golden brown sugar
  • 2 kaffir lime leaves**
  • 2 whole green cardamom pods
  • 1 pound red-skinned sweet potatoes (yams), peeled, cut into 1-inch cubes
  • 12 ounces russet potatoes, peeled, cut into 1-inch cubes
  • 1 1/4 cups finely grated peeled fresh coconut (about 4 ounces; grated in processor)
  • 2 large carrots, peeled, cut into 1/2-inch rounds
  • 2 tomatoes, cored, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces baby spinach leaves & Fresh Cream
Preparation

Puree first 7 ingredients in processor until paste forms. Cook in large pot over medium heat until aromatic, stirring often, about 10 minutes. Add tomato paste. Cook until mixture starts to darken and brown, stirring often, about 5 minutes longer. Add broth, brown sugar, lime leaves, and cardamom. Simmer 10 minutes, stirring often and scraping up browned bits. DO AHEAD Can be made 2 days ahead. Cool, cover, and chill. Bring to simmer before continuing. Add sweet potatoes, russet potatoes, coconut, carrots, tomatoes, 1 teaspoon salt, and 1/4 teaspoon pepper to mixture in pot. Bring to boil, then reduce heat to medium low. Cover and simmer until vegetables are tender, stirring occasionally, about 25 minutes. Add spinach, if desired, and cook until wilted, about 3 minutes. Season with salt and pepper. Discard lime leaves and cardamom. Transfer curry to bowl; garnish with cilantro and serve.

Indian Vegetarian Recipes: Stuffed Tomato
Ingredients

6 medium tomatoes, ripe
4 teaspoons unsalted butter
1 1/2 tablespoons shallots, minced
2 teaspoons garlic, minced
1 1/2 tablespoons flour
1/3 cup half-and-half
1 tablespoon dry sherry
1/2 cup fresh, soft cream cheese, goat cheese or marscapone
2 eggs, separated
3 tbsp chives, minced
2 tsp fresh savory or tarragon, minced
salt
freshly ground white pepper
3 cups mixed baby greens
1/4 cup vinaigrette
basil oil
sea salt, to taste
Preheat the oven to 400 degrees.

Preparation

Slice tops off the tomatoes and remove seeds and pulp. Sprinkle the insides with salt and drain tomatoes on paper towels upside-down. In a saucepan, melt the butter. Saute shallots and garlic and until soft but do not brown. Stir in flour and continue to cook for 2 to 3 minutes, stirring continuously. Add the half-and-half and sherry, stirring for 3 minutes longer until the mixture is smooth. Transfer to a bowl and allow to cool 5-7 minutes. Whisk in goat cheese, egg yolks, and seasonings. In a separate bowl, beat egg whites until they hold stiff peaks. Temper the eggs by stirring 1/4 of the whites into the cheese mixture. Carefully fold in the remaining whites. Spoon the souffle mixture into the tomato shells, mounding slightly. Place the tomatoes, shoulder to shoulder, in a lightly oiled baking or casserole dish. Bake for 20 to 25 minutes or until the tops are lightly puffed and browned. Serve the hot tomatoes on a bed of greens. Top with 1/4 cup vinaigrette and a dash of white pepper and basil oil.
